Ingredients
  

  • 4 boneless skinless chicken breasts

  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 large Portobello mushroom caps cleaned and sliced
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Chopped fresh parsley for garnish (optional)

Instructions
 

  • In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried thyme, dried oregano, salt, and pepper.
  • Add the chicken breasts to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  • Preheat your grill or grill pan to medium-high heat. Remove the chicken from the marinade and grill for 5-6 minutes per side or until cooked through.
  • While the chicken is cooking, melt the butter in a skillet over medium heat. Add the sliced mushrooms and sauté until tender and browned, about 5-7 minutes.
  • Sprinkle the flour over the mushrooms and stir to coat. Cook for 1-2 minutes, then gradually stir in the chicken broth and heavy cream.
  • Bring the mixture to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5-7 minutes.
  • To serve, spoon the mushroom sauce over the grilled chicken and sprinkle with chopped fresh parsley, if desired.

Notes

For a thicker sauce, use less chicken broth or more flour.
