Ricotta Cheese Mixture Recipe

Ricotta cheese mixture is a versatile and delicious recipe that can be used in a variety of dishes, from lasagna to stuffed shells. It typically includes ricotta cheese, grated Parmesan cheese, eggs, and seasonings such as salt, pepper, and parsley. This mixture can be whipped together quickly and easily, making it a great option for busy weeknights or entertaining guests.

Equipment

  • Cheesecloth or thin towel
  • Pot
  • Sieve

Ingredients
  

  • 4 cups of whole milk
  • 1 cup of heavy cream
  • 1/2 teaspoon of salt
  • 3 tablespoons of freshly squeezed lemon juice or white vinegar

Instructions
 

  • In a large pot, combine 4 cups of whole milk and 1 cup of heavy cream. Place the pot on the stove over medium heat, and slowly bring the mixture to a simmer.
  • Once the milk and cream mixture reaches a simmer, add 1/2 teaspoon of salt, and stir gently to combine.
  • Slowly pour in 3 tablespoons of freshly squeezed lemon juice or white vinegar, stirring gently as you pour. The mixture will begin to curdle and separate into curds and whey.
  • Continue to simmer the mixture for 2-3 minutes, stirring gently to prevent the curds from sticking to the bottom of the pot.
  • Remove the pot from the heat, and let it sit for 10-15 minutes to allow the curds to fully separate from the whey.
  • While the mixture is resting, set up your sieve over a large bowl, and line it with a double layer of cheesecloth or a thin towel.
  • Once the mixture has rested, carefully pour it into the sieve, allowing the whey to drain through the cheesecloth and into the bowl. Be sure to catch all of the curds in the cheesecloth.
  • Once all of the mixture has been poured into the sieve, gently gather up the corners of the cheesecloth and twist them together to form a ball. Squeeze gently to remove any remaining whey.
  • Transfer the ricotta cheese mixture to a container, cover, and refrigerate until ready to use.

  • Be sure to use whole milk and heavy cream for the richest, creamiest ricotta cheese.
  • If you prefer a smoother ricotta cheese, you can puree it in a food processor or blender after it has been refrigerated.
