Ingredients

  • 2-3 lbs turkey neck (This amount can feed 4-6 people)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups of chicken broth
  • 1 cup of dry red wine (such as cabernet sauvignon, merlot, or shiraz)
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  • Start by seasoning the turkey necks with salt and pepper. Be generous with the seasoning, as this will add flavor to the dish.
  • Heat a large skillet over medium-high heat and add a tablespoon of oil. Once the oil is hot, add the turkey necks to the skillet and brown them on both sides for about 2-3 minutes per side. This step is important as it will add depth of flavor to the dish and give the turkey necks a nice golden brown color.
  • Once the turkey necks are browned, remove them from the skillet and place them in the slow cooker.
  • Add the chopped onion and minced garlic to the skillet and sauté until softened, about 5 minutes. This will help to release the flavors of the onion and garlic and add more depth of flavor to the dish.
  • Add the chicken broth, red wine, bay leaves, thyme, and rosemary to the skillet and bring to a simmer. This mixture will add even more flavor to the dish and help keep the turkey necks moist as they cook.
  • Pour the mixture over the turkey necks in the slow cooker. Make sure to spoon some of the liquid over the turkey necks to ensure that they are fully submerged.
  • Cook on low for 6-8 hours, or until the turkey necks are tender and cooked through. The cooking time will depend on the size of the turkey necks, but they should be cooked through and tender when they are ready.
  • Once the turkey necks are done cooking, remove them from the slow cooker and let them rest for a few minutes before serving. This will allow the juices to redistribute throughout the meat and make it even more tender.Discard the bay leaves before serving.
  • Taste the dish and adjust the seasoning as needed, adding more salt or pepper if necessary.
