- 1 cup cooked whole wheat couscous
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh basil

- 1/4 teaspoon salt and black pepper
- 1 egg
- 2 tablespoons olive oil
Gather all the ingredients needed for the recipe. Preheat your oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. Drain and rinse the cooked chickpeas, then add them to a food processor or blender and pulse until roughly chopped.
Combine the chopped chickpeas, cooked couscous, grated Parmesan cheese, chopped parsley and basil, garlic powder, salt, black pepper, and egg in a large mixing bowl. Mix all the ingredients until they are evenly combined.
Using your hands, scoop out a tablespoon of the mixture and roll it into a ball shape. Place the meatballs on the prepared baking sheet, ensuring they are evenly spaced. Repeat until all the mixture has been used up.
