Preheat the oven to 350°F (175°C).
Rinse the turkey necks under cold running water and pat them dry with paper towels.
In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, thyme, rosemary, and paprika.
Rub the seasoning mixture all over the turkey necks, making sure they are well coated.
Place the turkey necks in a large baking dish and cover the dish tightly with aluminum foil.
Roast the turkey necks in the oven for 2-2 1/2 hours, or until they are tender and fully cooked.
Remove the aluminum foil from the baking dish and continue to roast for an additional 20-30 minutes, or until the turkey necks are golden brown.
Using kitchen tongs, transfer the turkey necks to a serving platter and let them rest for 5-10 minutes before serving.
