Blue Oyster Mushroom Stir-Fry

This recipe is for a stir-fry made with blue oyster mushrooms, bell peppers, garlic, ginger, soy sauce, and oyster sauce. The mushrooms and vegetables are stir-fried until tender and then coated in a flavorful sauce. This dish is easy to make and can be served over rice or noodles.

Ingredients
  

  • 1 pound blue oyster mushrooms trimmed and sliced
  • 1 tablespoon vegetable oil
  • 1 clove garlic minced
  • 1 teaspoon grated ginger
  • 1/2 red bell pepper sliced
  • 1/2 yellow bell pepper sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce

Instructions
 

  • Heat the vegetable oil in a wok or stir-fry pan over medium-high heat.
  • Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
  • Add the bell peppers and stir-fry for 2-3 minutes until softened.
  • Add the blue oyster mushrooms and stir-fry for 4-5 minutes until tender and slightly browned.
  • In a small bowl, whisk together the soy sauce and oyster sauce.
  • Pour the sauce mixture into the pan and stir-fry for another 1-2 minutes, ensuring that the mushrooms and vegetables are coated evenly.
  • Serve hot over rice or noodles.

Notes

  • Avoid overcooking the blue oyster mushrooms as they can become rubbery. Cook them just until tender. Feel free to add other vegetables such as broccoli, snap peas, or carrots for added texture and flavor.
  • For a spicier kick, add some crushed red pepper flakes or sliced chili peppers during the stir-frying process.
  • Adjust the seasoning according to your taste preference by adding more soy sauce or oyster sauce as desired.
  • Be mindful not to overcrowd the pan to ensure that the mushrooms and vegetables cook evenly.
