Ingredients
  

  • 1 pre-made pie crust
  • 1 cup firm tofu, drained and crumbled
  • 1 cup mixed vegetables (such as bell peppers, onions, spinach)
  • 1/2 cup shredded vegan cheese
  • 1/2 cup unsweetened plant-based milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon cornstarch
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste

Instructions
 

  • Start by preheating your oven to 375 degrees Fahrenheit. Place the pre-made pie crust in a pie dish and press it down gently to fit the shape of the dish.
  • Heat olive oil in a skillet over medium heat. Add the mixed vegetables and sauté until they are tender. Season with salt, pepper, and garlic powder according to your preferences. Set aside.
  • Combine the crumbled tofu, vegan cheese, plant-based milk, nutritional yeast, cornstarch, turmeric, salt, and pepper in a mixing bowl. Mix well until all the ingredients are evenly incorporated.
  • Spread the sautéed vegetables evenly over the pie crust. Pour the tofu filling mixture on top, ensuring it covers the vegetables completely. Smooth the surface with a spatula.
    Place the quiche in the oven and bake for 30-35 minutes until the filling is set and the crust is golden brown.
  • Once the quiche is baked, remove it from the oven and let it cool for a few minutes. Slice it into wedges and serve it warm. This eggless vegetarian quiche is perfect as a main dish or as part of a brunch spread.
