- 2 cups unsalted butter, softened
- 1 cup powdered sugar, plus extra for dusting
- 2 teaspoons vanilla extract
- 1/2 cup brandy or orange juice (optional)
- 1 cup roasted almonds, finely chopped
- 4 cups all-purpose flour
- 1/2 teaspoon baking powder
- Pinch of salt
Preheat the oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
Add the vanilla extract and brandy/orange juice (if using) to the mixture and mix well.
Stir in the finely chopped roasted almonds.
In a separate bowl, combine the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Shape the dough into small balls, roughly the size of a walnut, and place them on a baking sheet lined with parchment paper.
Bake the Kourabiedes in the preheated oven for 20-25 minutes or until they turn a light golden colour.
Allow the cookies to cool on a wire rack.
Generously dust the cooled Kourabiedes with powdered sugar using a sieve or fine-mesh strainer.
