Ingredients
  

  • 1 cup raw cashews (soaked in water for at least 2 hours or overnight)
  • 2 tablespoons non-dairy yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1-2 tablespoons non-dairy milk

Instructions
 

  • Soak one cup of raw cashews in water for at least 2 hours or overnight. Drain and rinse the cashews before using them.
  • Add the soaked and drained cashews to a blender or food processor. Blend on high speed until they are smooth and creamy, scraping down the sides as needed.
  • Add 2 tablespoons of non-dairy yogurt, 2 tablespoons of lemon juice, 2 tablespoons of maple syrup, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of sea salt to the blender. Blend until all the ingredients are well combined and smooth, adding 1-2 tablespoons of non-dairy milk as needed to reach the desired consistency.
  • Transfer the frosting to a mixing bowl and cover it with plastic wrap. Chill the frosting in the fridge for at least 30 minutes before using it to allow it to thicken and set. Once chilled, use a spatula to spread the frosting over your desired dessert.
