- 4 lamb shanks
- 4 cloves of garlic, minced
- 2 large onions, thinly sliced
- 4 tomatoes, diced
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 2 bay leaves
- Salt and black pepper to taste
- 1/2 cup white wine (optional)
- 4 large potatoes, peeled and cut into chunks
- 1 cup chicken or vegetable broth
Pat the lamb shanks dry with paper towels.
Season the lamb shanks with salt and black pepper.
Place the lamb shanks in the bottom of the slow cooker.
Sprinkle minced garlic over the lamb shanks.
Layer sliced onions on top.
Add diced tomatoes around the lamb.
Drizzle olive oil over the lamb and vegetables.
Squeeze the juice of one lemon over the mixture.
Sprinkle dried oregano and thyme evenly.
Add bay leaves.
If using white wine, pour it over the lamb and vegetables.
Place peeled and chunked potatoes around the lamb.
Pour chicken or vegetable broth over the entire mixture.
Cover the slow cooker and cook on low heat for 7-8 hours or until the lamb is tender and falls off the bone.
Test the lamb shanks for doneness by ensuring they are tender and easily pull away from the bone.
Carefully remove the lamb shanks and serve on a platter.
Spoon the vegetables and cooking juices over the lamb.
Discard bay leaves before serving.
