  • 1/4 cup fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey or maple syrup
  • 1 garlic clove minced
  • Salt and pepper to taste
  • Optional: Fresh herbs like parsley basil, or dill (finely chopped)

Instructions
 

  • In a bowl, whisk together the fresh lemon juice, Dijon mustard, honey or maple syrup, minced garlic, and a pinch of salt and pepper.
  • Taste the dressing and adjust the sweetness or tanginess by adding more honey or lemon juice as desired.
  • If desired, add in the finely chopped fresh herbs and give the dressing a final whisk to incorporate them.
  • Use the dressing immediately or store it in an airtight container in the refrigerator.

Notes

  • For a creamier texture, you can add 1-2 tablespoons of Greek yogurt or tahini to the dressing. If you prefer a sweeter dressing, increase the amount of honey or maple syrup.
  • Feel free to experiment with different herbs and spices to customize the flavor.
