Refried Bean Tacos Recipe

Refried Bean Tacos are a delicious and satisfying Mexican dish that combines the creaminess of refried beans with the freshness of taco toppings. To make them, warm up tortillas, spread a layer of refried beans, and top with shredded lettuce, diced tomatoes, sliced avocado, and a drizzle of salsa. They are easy to make, packed with flavor, and perfect for a quick and tasty meal or snack.

Ingredients
  

  • 2 cups of cooked or canned pinto beans
  • 2 tablespoons of vegetable oil
  • 1 small onion
  • 2 cloves of garlic
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of cayenne pepper (optional)
  • Salt
  • 1/4 cup of vegetable broth or water
  • Eight small tortillas (corn or flour)
  • Toppings

Instructions
 

  • Heat vegetable oil in a large skillet or pan over medium heat. Doing this allows the onion to sauté gently without burning. Once you have done this, Add your chopped onion to the pan and saute for 3 to 4 minutes. Alternatively, you can sauté until the onion changes color.
  • Add the cooked or canned pinto beans to the saucepan and mash them with a fork or a potato masher. This is until they are partially mashed but still have some texture. Mashing the beans creates a creamy texture while leaving some whole beans intact. 
    This step helps the beans bind together, making them easier to spread on the tortillas. Once you have done this, continue cooking for a few minutes.
  • Once you have mashed the beans into a saucepan or skillet, the next thing to do is add the necessary ingredients for the dish. Ensure you sprinkle the ground cumin, chili powder, paprika, and salt over the mashed beans. You must Stir well to incorporate the spices and coat the beans evenly.
    Adding the spices at this stage allows them to infuse into the beans, enhancing their flavor and giving them a delicious, well-rounded taste.
  • Pour vegetable broth or water into the beans to adjust the consistency. The vegetable broth or water helps create a smooth and spreadable consistency for the refried beans. To make the dish thick, add a little water. On the other hand, you can add more if you require a thinner texture.
    Once you have done this, stir and let the mixture simmer for 5-10 minutes. This will allow the flavors to meld together. If needed, you can adjust the seasoning according to your taste preferences.
  • While the refried beans simmer, you can warm tortillas in a dry skillet. You can also heat them briefly in the oven. This softens tortillas and makes them more pliable. The refried beans should have reached the desired consistency when the tortillas were warmed. You can remove the beans from the heat. 
  • Add a spoonful of the refried bean mixture to each warmed tortilla. Ensure you spread it out evenly. Garnish the tacos with your choice of toppings, such as shredded lettuce, diced tomatoes, chopped cilantro, sliced jalapenos, grated cheese, sour cream, guacamole, salsa, or any preferred condiments.
    Immediately Serve the Refried Bean Tacos while They are still warm, and Enjoy their delicious flavors and textures.
