Ingredients
  

  • 1 tube pre-cooked polenta (from Trader Joe's)
  • Assorted vegetables (such as mushrooms, zucchini, and red bell pepper)
  • 1 clove of garlic, minced
  • 1/2 onion, diced
  • 1 tsp salt
  • 3 tbsp olive oil

Instructions
 

  • Slice the assorted vegetables into bite-sized pieces.
  • In a frying pan or skillet over medium heat, add some olive oil and sauté the minced garlic and diced onion until fragrant and softened, around 2-3 minutes.
  • Add the sliced vegetables to the pan and toss them until they are coated in the garlic and onion mixture. Cook for around 5-7 minutes or until they are softened and cooked through.
  • While the vegetables are cooking, slice the polenta tube into rounds.
  • In another frying pan or skillet over medium-high heat, add some olive oil and sear the polenta rounds until they are golden brown and crispy, around 2-3 minutes on each side.
  • To serve, place the polenta rounds on a plate or platter and top with the sautéed vegetables. Season with salt and pepper to taste and garnish with fresh herbs if desired.
