Vegan Broccoli Quiche

Vegan broccoli quiche is a delicious and healthy dish that combines the earthiness of broccoli with the creamy richness of vegan cheese and eggs. It is versatile and can be served hot or cold for any occasion, from a fancy brunch to a laid-back potluck.

Ingredients
  

  • 1 1/2 cups of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/2 cup of vegan butter
  • 1/4 cup of ice water
  • 1 tablespoon of olive oil
  • 1 small onion diced
  • 2 cloves of garlic minced
  • 2 cups of broccoli florets chopped
  • 1 cup of vegan cheese grated
  • 1 1/2 cups of silken tofu
  • 1/4 cup of nutritional yeast
  • 1 tablespoon of cornstarch
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions
 

  • Prepare the crust by combining flour, salt, vegan butter, and ice water. Form a dough, refrigerate for 30 minutes.
  • Sauté onions, garlic, and broccoli in olive oil until tender.
  • Blend silken tofu, nutritional yeast, cornstarch, turmeric, thyme, salt, and pepper until smooth. Mix with sautéed vegetables and grated vegan cheese.
  • Roll out the dough and place it in a quiche dish. Pour the filling into the crust.
  • Bake at 375°F (190°C) for 35-40 minutes until the filling is set and the crust is golden brown.
  • Let it cool before serving.

Notes

1. Use cold vegan butter for a flakier crust.
2. A tart pan or square baking dish can be used if you don't have a quiche dish.
3. Add other vegetables like mushrooms or bell peppers to the filling for variety.
4. Top with additional vegan cheese during the last few minutes of baking for a stronger cheesy flavor.
5. Allow the quiche to cool slightly before slicing to maintain its shape.
