- 1 block of firm tofu (14 oz)
- 1/2 cup of breadcrumbs
- 1/2 cup of grated carrots, chopped onions, and chopped celery
- 1/4 cup of tomato sauce
- 2 tablespoons of soy sauce
- 2 tablespoons of nutritional yeast
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried basil
- Salt and pepper to taste
Preheat your oven to 375 degrees Fahrenheit and prepare a loaf pan by lightly greasing it with cooking spray.
In a large mixing bowl, crumble the firm tofu and add the breadcrumbs, grated carrots, chopped onions, and chopped celery. Mix everything until well combined.
After preparing the tofu mixture, add the tomato sauce, soy sauce, nutritional yeast, olive oil, garlic powder, dried thyme, and dried basil. Mix everything until well combined. Season with salt and pepper to taste.
Transfer the tofu mixture to the prepared loaf pan and press it down firmly. Bake for 30 – 45 minutes or until the top is golden brown and the meatloaf is firm to the touch.
