Ingredients
  

  • 1 cup chickpea flour also known as gram flour or besan
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon red chili powder adjust according to spice preference
  • 1/2 teaspoon salt adjust according to taste
  • 1/2 cup water
  • 1 small onion finely chopped
  • 1 small green chili finely chopped (adjust according to spice preference)
  • 1/4 cup fresh cilantro leaves chopped
  • Oil for frying vegetable or canola oil

Instructions
 

  • In a mixing bowl, combine the chickpea flour, baking powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt.
  • Gradually add water to the dry ingredients while whisking or stirring continuously until you have a smooth batter.
  • Let the batter rest for about 10 minutes to allow the flavors to meld.
  • Add the finely chopped onion, green chili, and cilantro to the batter. Mix well to ensure even distribution.
  • Heat oil in a frying pan or skillet over medium heat.
  • Once the oil is hot, drop spoonfuls of the batter into the oil, making small fritters.
  • Fry the fritters for about 2-3 minutes on each side until they turn golden brown and crispy.
  • Fry the fritters in batches, avoiding overcrowding the pan.
  • Use a slotted spoon or tongs to carefully flip the fritters and remove them from the oil.
  • Place the fried fritters on a plate lined with paper towels to drain excess oil.
  • Serve the spicy chickpea flour fritters hot as a snack or appetizer. Enjoy them on their own or with your favorite dipping sauce or chutney. Garnish with additional cilantro leaves, if desired.

Notes

  • Feel free to add other vegetables or spices to the batter, such as grated carrots, finely chopped spinach, grated ginger, or garam masala, to create different flavor variations.
  • Adjust the spiciness by increasing or reducing the amount of red chili powder or green chili according to your preference.
  • Make sure the oil is hot enough before adding the batter to prevent oily and greasy fritters.
