Costco Orange Cranberry Biscotti

This recipe is for a delicious and crunchy biscotti that combines the flavors of tangy cranberries and bright citrusy orange. Perfect for a snack or dessert, this biscotti is twice-baked to achieve a crispy texture that pairs well with your favorite hot beverage.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp orange extract
  • 1 cup dried cranberries
  • 1 tbsp orange zest

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt.
  • Using an electric mixer, beat the softened butter and granulated sugar until creamy and smooth.
  • Add the eggs one at a time, beating well after each addition. Then, add in the vanilla extract and orange extract.
  • Gradually add the dry ingredients into the wet mixture and mix until just combined. Then, fold in the dried cranberries and orange zest.
  • Form the dough into a 12-inch long log on the prepared baking sheet. Flatten the log slightly to form a rectangular shape.
  • Bake the log for 25 minutes, or until lightly golden brown on the edges. Remove from the oven and let cool for 10 minutes.
  • Using a sharp serrated knife, cut the log into 1/2 inch slices. Place the slices back onto the baking sheet and bake for an additional 15-20 minutes or until crispy and lightly golden.
  • Let the biscotti cool completely on a wire rack before serving.

Notes

Store the biscotti in an airtight container at room temperature for up to 1 week.
For an extra touch, you can drizzle a glaze on top of the biscotti, made with powdered sugar and orange juice.
