- 1 pound (about 450g) fresh squid/calamari, cleaned and sliced into rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 cup buttermilk
- Vegetable oil, for frying
- Lemon wedges, for serving
- Fresh parsley, chopped, for garnish (optional)
Clean and slice the squid into rings. If needed, lay it out on a cutting board and slice it up into ring shapes.
In a large bowl, whisk together 1 cup of flour, 1/2 cup of cornstarch, 1 teaspoon of baking powder, 1 teaspoon of salt, and 1/2 teaspoon each of black pepper, garlic powder, and paprika. Ensure it's a smooth mix.
Pour 1 cup of buttermilk into another bowl. Dip each squid ring into the buttermilk until it's coated.
Roll the buttermilk-coated rings in the dry mix. Make sure each ring is nicely coated.
In a deep fryer or pot, heat vegetable oil to 350°F (175°C). Carefully place the coated rings into the hot oil and fry for 2-3 minutes until they're golden brown.
Use tongs or a slotted spoon to take the golden rings out of the oil. Let them sit on a plate with paper towels to soak up any extra oil.
Sprinkle some fresh parsley if desired and put the calamari rings on a plate. Serve them with lemon wedges for that zesty kick.
