Preheat your oven to 350°F.
In a small bowl, mix together the salt, pepper, thyme, garlic powder, and onion powder.
Rub the seasoning mixture all over the pork roast, making sure to cover all sides.
In a large roasting pan, heat the olive oil over medium-high heat.
Add the pork roast and sear on all sides until browned.
Remove the roast from the pan and set aside.
Add the potatoes, carrots, onion, and garlic to the same roasting pan.
Mix everything together and place the pork roast on top of the vegetables.
Pour the chicken broth over everything.
Cover the roasting pan with foil and place it in the oven.
Roast for about 2 1/2-3 hours, or until the meat thermometer reads 145°F.
Remove the foil and place the roasting pan back in the oven for an additional 10-15 minutes to brown the top of the pork roast.
Remove from the oven and let the roast rest for 10-15 minutes before slicing and serving.
