Ingredients
  

  • - 1 boneless pork loin roast 3-4 pounds
  • - 2 teaspoons salt
  • - 1 teaspoon black pepper
  • - 2 teaspoons dried thyme
  • - 1 teaspoon garlic powder
  • - 1 teaspoon onion powder
  • - 1 tablespoon olive oil
  • - 6-8 small red potatoes quartered
  • - 2 cups baby carrots
  • - 1 large onion chopped
  • - 4 cloves garlic minced
  • - 1 cup chicken broth

Instructions
 

  • Preheat your oven to 350°F.
  • In a small bowl, mix together the salt, pepper, thyme, garlic powder, and onion powder.
  • Rub the seasoning mixture all over the pork roast, making sure to cover all sides.
  • In a large roasting pan, heat the olive oil over medium-high heat.
  • Add the pork roast and sear on all sides until browned.
  • Remove the roast from the pan and set aside.
  • Add the potatoes, carrots, onion, and garlic to the same roasting pan.
  • Mix everything together and place the pork roast on top of the vegetables.
  • Pour the chicken broth over everything.
  • Cover the roasting pan with foil and place it in the oven.
  • Roast for about 2 1/2-3 hours, or until the meat thermometer reads 145°F.
  • Remove the foil and place the roasting pan back in the oven for an additional 10-15 minutes to brown the top of the pork roast.
  • Remove from the oven and let the roast rest for 10-15 minutes before slicing and serving.

Notes

  •  If you don't have chicken broth, you can use beef broth or even water instead.
  • To make this recipe even more flavorful, try adding some fresh herbs like rosemary or thyme.
