Ingredients
  

  • 2 liters of milk (whole milk is recommended)
  • 1/4 tsp calcium chloride (optional)
  • 1/4 tsp liquid rennet or 1/2 rennet tablet
  • 1 tsp cheese salt (or regular salt)

Instructions
 

  • Heat the milk: Pour the milk into a large pot and heat it on medium heat until it reaches 32°C. If you are using pasteurized milk, add calcium chloride to the milk and stir it in well.
  • Add the rennet: Dissolve the rennet tablet in a small amount of cool, non-chlorinated water. If using liquid rennet, simply measure out the required amount. Add the rennet to the milk and stir it in for about 30 seconds.
  • Turn off the heat and let the milk sit undisturbed for about 45 minutes to allow the curd to form. You should see the milk separate into curds and whey.
  • Use a long knife to cut the curd into small cubes. Make sure the cubes are small and even.
  • Use a slotted spoon to remove the curds from the whey and place them in a large bowl.
  • Stretch the cheese: While the curds are still hot, use your hands to stretch and pull the cheese until it forms long, thin strings. This process should take about 10-15 minutes.
  • Once you have stretched the cheese, roll it into a ball or shape it into a long rope. Sprinkle the cheese salt over the cheese and knead it in.
  • You can either store the cheese in the refrigerator for up to a week or freeze it for longer storage.
