Ingredients
  

  • 1 cup raw cashews, soaked overnight and drained
  • 1 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14-ounce) can of artichoke hearts, drained and roughly chopped
  • 1 cup frozen spinach, thawed and squeezed dry
  • 1/4 cup vegan mayonnaise
  • 1/4 cup grated vegan Parmesan cheese (optional)

Instructions
 

  • First, grab your blender or food processor and toss in the soaked and drained cashews.
    Add the unsweetened almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and black pepper. Blend it all together until you’ve got a silky smooth cashew cream. Don’t forget to scrape down the sides to ensure everything gets mixed in perfectly.
  • After blending the cashew, transfer the cashew cream to a mixing bowl.
    Now, it’s time to throw in the star ingredients: the artichoke hearts and spinach. Roughly chop up the artichoke hearts after draining them, and make sure your frozen spinach has been thawed and squeezed dry. Gently fold them into the cashew cream, ensuring everything gets nicely coated.
  • To take the creaminess up a notch, stir in that vegan mayo. It’ll make your dip even richer and more indulgent. And if you’re feeling fancy, sprinkle in some grated vegan Parmesan cheese for extra flavor. Give it all a good mix until everything is well incorporated.
  • Preheat your oven to 375 degrees Fahrenheit. Grease up a baking dish, and pour your dip mixture into it. Spread it out evenly so every bite gets its fair share of deliciousness. Pop that dish into the oven and let it bake for 20 to 25 minutes. – You want the top to turn a beautiful golden brown and the dip hot and bubbly.
  • Once it’s out of the oven, Give it a final touch by garnishing it with fresh parsley for a burst of color. Cool down for a few minutes, and then gather your favorite bread, tortilla chips, or veggie sticks to start dipping.
