Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic
  • 1 can white beans
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon arrowroot starch
  • 1 cup non-dairy milk
  • 1 tablespoon lemon juice
  • 1 cup fresh spinach
  • 1 cup canned or jarred artichoke hearts
  • 1/4 cup vegan parmesan

Instructions
 

  • Warm 1 tablespoon of extra virgin olive oil in a large skillet over medium heat. Add the minced garlic and cook until it turns light brown and fragrant. Remove the skillet from the heat. While the garlic is cooking, preheat your oven to 350 degrees Fahrenheit.
  • Combine the non-dairy milk, white beans, cooked garlic, nutritional yeast, sea salt, black pepper, arrowroot starch, and lemon juice in an upright blender. Blend until the mixture becomes smooth and creamy.
  • Return the skillet to medium heat and add the remaining olive oil. Add the chopped spinach and cook until it turns bright green. Next, add the chopped artichoke hearts to the skillet, stirring them with spinach.
  • Pour the white bean cream over the cooked spinach and artichokes, lightly stirring to incorporate all the ingredients. If you’re using an oven-safe skillet, you can continue baking directly in the skillet. 
    However, if you’re not using an oven-safe skillet, transfer the spinach and artichokes into a 9-inch square baking dish or pie plate before pouring the white bean cream over them. Sprinkle the vegan parmesan evenly over the top.
  • Place the skillet or baking dish in the oven and bake for approximately 12 minutes until the dip is warmed and the top is lightly golden. 
    Once done, remove it from the oven and let it cool for a few minutes. Serve this delicious Vegan Spinach Artichoke Dip with White Beans with an assortment of vegetables, chips, crackers, or sliced baguette.
